Vegetable coconut rice sand cake
During lent we all want the sweet pastries. I wanted to make a cake-a pudding of coconut-rice stuffing with dried apricots, garnished with berries and orange zest, which give it a touch of freshness. Very tasty to cook for Breakfast with a Cup of morning tea!

Ingredients

  • Dried apricots

    150 g

  • Vanilla

  • Brown sugar

    0.5 cup

  • Vegetable oil

    90 g

  • Corn flour

    1 cup

  • Flour

    0.5 cup

Cooking

In a saucepan add 1 Cup Jasmine rice company Mistral, ½ Cup coconut flakes 2.5 cups water, diced dried apricots, vanilla.

Add ½ Cup fine brown sugar (see according to your taste) of the company "the Mistral". And put to boil until tender over low heat.

Mix with a mixer, 90g of vegetable oil without smell and 90g very cold water to a white color.

Add the flours and knead the dough.

Put cooked stuffing on the dough and bake for 25-30 minutes at 180 degrees.
