Pork in vegetable sauce with rice
This sauce I often make for my family for meat, as my daughter always tries to catch the eggplant and peppers from the plate.

Ingredients

  • Pork

    500 g

  • Olive oil

    3 Tbsp

  • Salt

  • Black pepper

  • Onion

    1 piece

  • Pepper

    1 piece

  • Eggplant

    1 piece

  • Tomato

    200 g

  • Figure

    2 piece

  • Water

    100 ml

1. In boiling salted water, drop a bag of rice and boil according to the instructions on the package.

2. While cooking the rice, the meat cut into small pieces. In a pan heat the oil and fry the meat until Golden brown. Then pour water and simmer for 15-20 minutes on low heat.

3. While the meat is stewed, onion cut into cubes, pepper strips, eggplant cubes.

4. In another pan heat the oil. Fry the onions until transparent, add the pepper and eggplant. To fry, add the tomatoes and saute a few minutes.

5. Then grind the vegetables to a blender, add to the pan with the meat, then 5 minutes, season with salt and pepper to taste and remove from heat.

6. Cooked rice, remove to a plate to let it drain. Serve rice with meat. Bon appetit!
