In a heatproof bowl mix the egg yolks, liquid honey, cane sugar (universal "Mistral").
Put the yolk-honey mixture in a water bath and whisk until it slightly thickens. Cool.
Pre-chilled cream vzbit in thick foam.
In the egg-honey mixture, add the lemon juice and gently with a silicone spatula to mix with whipped cream.
Put the creamy mass in a shallow form and place in the freezer for 2-3 hours. To get, cut at random, put in kremanki and decorate with fruit, pour a little liquid honey.
