Coconut pancakes with cream and pineapple
Breakfast-dessert for a special occasion - very tasty pancakes with delicious coconut notes with an airy filling of whipped cream and a pineapple under the caramel syrup! Not cloying, without any solo taste.... The very soft!

Ingredients

  • Pineapple

    0.5 can

  • Cream

    250 ml

  • Sugar

    3 Tbsp

  • Flour

    75 g

  • Coconut milk

    150 ml

  • Powdered sugar

    1 tsp

  • Chicken egg

    2 piece

  • Butter

    4 Tbsp

  • Orange juice

    100 ml

  • Topping pastry

For the filling, pineapple'll take out from the syrup, Pat dry and fry in a pan without added fat until slightly Golden. In principle, this step is necessary in order to dry the pineapples, so they are not "floated" in the stuffing. Roasted pineapple leave to cool.

Whisk the cream with 2 tablespoons sugar. Mix with pineapple. The stuffing is ready. Until you put it in the fridge.

In the remaining oil bake pancakes. Grease the pan before baking each pancake with a brush dipped in melted butter. I baked it in a frying pan large diameter, I got 5 pancakes.

On a clean dry pan heated the remaining sugar (1 tbsp), stirring with a wooden spatula, until obtaining a caramel.

To add to the caramel juice (syrup from the compote) and, stirring constantly, cook until a syrup.

Each roll cut in half, arrange on plates and serve, watering on top of the syrup. Optionally, you can decorate confectionery topping in the form of hearts. Brew coffee and entertained their favorite, and of course, enjoy yourself!
