Lemon date muffins with cherries
Not like dates just like that, but baking them - a real treat, so I decided to attach a six-pack of dates donated. The cupcakes turned out wonderfully, full-bodied flavor of dates and lemon, slightly tart, not cloying, test structure air and at the same time, a little humid and a slight accent tart cherries complement to all manner of wonderful muffins. Made very easy, fast and the result will please you in 40 minutes from entering the kitchen.

From dates to remove pits, chop. With lemon to remove the zest (to put aside, useful), a white crust to cut, remove the seeds and the flesh to cut. To connect the dates and the flesh of the lemon, add the wine, honey, bring to boil and stew on medium heat for 5-7 minutes. Then the whole mass to turn into a puree using a blender. Puree to cool.

Beat the 2 eggs with 1 tbsp. sugar and 1/3 tsp salt into the white mass. Whisk for approximately 5-7 minutes.

Then to the eggs add the date puree, sour cream, vegetable oil, spices, zest from lemon, milk, mix everything with a mixer, but not beat, and at a low speed just to mix. Now the mixer it is necessary to remove completely, even so was not tempted to use it )))

Flour, starch and baking powder mix well, sift. Add the flour mixture and with a spatula (spoon) stir gently, not to homogeneity, and, just to make the flour damp, small lumps should remain. In any case, do not knead, as it did not want!!!!!

Molds for muffin to lay a paper cuffs or well grease and sprinkle with flour. Fill molds 2/3 of the dough. Now take all the berries (fruits), if frozen, do not thaw. Cherry - the perfect choice for such a test, in my opinion, but black currants will be a nice addition, and generally, to your taste, though generally without a thing. Insert one cherry in the middle and lightly press it into the dough.

Preheat the oven to 180 C. Bake for about 20 minutes, until dry sticks. The main thing - not to overdo, get ready quickly, I'm a little distracted and they I have a more tanned than I would like, but that's okay, it was very tasty. Of this amount, the test I got 15 cupcakes.
