Onion cut into thin half-rings. Marinate for 15 minutes in mixture of soy sauce and juice of half a lemon.
Mozzarella cut into pieces (mini-balls - as I have - cut in half). The original recipe used the cheese. Parsley divided into leaflets. Drain olives from brine.
Watermelon pulp (seedless) cut into fairly large cubes - about the size of maslinka. Sprinkle dry herbs de Provence.
Gently combine all the ingredients, add the onion together with the marinade. If salad is made with mozzarella and not cheese, perhaps, is it a little salt. If desired, lightly sprinkle them with olive oil.
