Cooking
Flour, powdered sugar, egg yolk and soft butter - mix and knead the dough.
Put the dough in the baking pan (26 cm) and spread evenly over the bottom of the form. Prick with a fork the dough. Preheat oven to temperature of 180*C (with the Convention up to 160 ) Bake for 20 minutes.
Cool. Chocolate to melt and lubricate the surface of the cake.
For the filling: beat the butter with sugar, mix with the eggs and yolk, add the cheese, cheese, pudding and lemon zest. Fill the crust with filling and bake for about 1 hour.
During this time the filling should thicken and become elastic. The finished cake remove from the oven and let stand for 8-10 minutes. Remove from the mold.
Before serving, sprinkle brown sugar and put under the grill or using a kitchen blowtorch to melt the sugar. Get a nice crunchy caramelized crust.
