Salad with quinoa
This salad is very tasty, nutritious and easy. He will satisfy every cowboy and cowgirl!!!

Ingredients

  • Walnuts

    1 cup

  • Quinoa

    1 cup

  • Water

    1.5 cup

  • Cranberry

    0.5 cup

  • Cheese

    0.66 cup

  • Olive oil

    0.333 cup

  • Lemon juice

    2 Tbsp

  • Salt

  • Apple

    1 piece

In a pan, fry the chopped walnuts for about 5 minutes. Then remove from the heat and allow to cool.

For the sauce: 1/3 Cup roasted nuts, olive oil and lemon juice put in blender and mix until smooth.

Apples cut into small cubes, wash cranberries, feta cheese finely chop.

Quinoa cover with water and bring to a boil over high heat. Then reduce the gas, close the lid and cook until tender about 15-20 minutes.

In a large bowl mix the quinoa, apples, cranberries, cheese and remaining nuts. Pour the sauce on top, add salt and pepper and stir.
