Delicious cake with a fancy cake and very delicate and persistent cream-mousse. After trying this cake many will agree with me that without butter, eggs, cream you can prepare a very delicious cake and not realize that it is lean.

Cooking
Dried apples bring water to a boil, remove from heat and leave in water until tender.

5 minutes before end of cooking, put the agar-agar and boil until dissolved.
The resulting mass is slightly cooled.
Then whip at high speed for 15-20 min.
The mass turns thick and increases in volume 3 times.
Collect the cake in the form with borders. 1 layer of sponge cake, pour the mousse, then put the cake etc. etc. Turns out 3 layers of cake and 3 layers of mousse.
Immediately, while the mousse is not frozen decorate with nuts, prunes and raisins. Put in the refrigerator until fully cured.
Exempted from the form. The side I don't decorate, because I think that cake is good.
