Something like that. Cranberries do not thaw, keep in the freezer before mixing with the dough.
Nuts and chocolate chop with a knife (you can grate the chocolate, but I find it easier to cut). The nuts do not grind! Needs to be small pieces.
Coffee dissolve in hot water, mix with chocolate, salt, vanilla sugar, alcohol. Mix well.
Separate the whites from the yolks, stir the yolks into the chocolate mass.
Add the flour and knead. Will be a thick dough.
Beat the whites with the lemon juice and sugar (the sugar we pour gradually) in a foam.
The chocolate add 1/3 of the protein, the dough will become more pliable. Add nuts, cranberries and zest. Knead.
Gently stir in the remaining part of the protein, trying not very upset foam.
Form grease with oil or margarine, add flour. Put the cupcake batter. Bake in pre-heated to 200 C oven. In order to avoid burning the bottom I put a pan with water. I have cared for about 35-40 minutes, tried the stick, as always. If the top is burning, cover with wet parchment.
Barbecued - pulled, put on a plank, on a wet cloth (at least I do), covered with a towel. After 5-10 minutes, you can get (I turn on the Board, and then back on course). The top cracked at the same time, crumbled, crust was very fragile.
