Mash with leeks and sun-dried tomatoes

Ingredients

  • Mash

    0.5 cup

  • Leeks

    70 g

  • Carrots

    1 piece

  • Garlic

    1 tooth

  • Sundried tomatoes

    4 slice

  • Vegetable oil

    2 Tbsp

  • Seasoning

  • Salt

  • Black pepper

  • Parsley

First we need to soak the mung beans at least 2 hours. And then boil it until tender. Drain the water. I mash soaked 4 hours, and cook it for 20 minutes. Keep the beans seethe, – we need them all.

The leeks should be cut into rings, carrots to grate on a coarse grater.

Garlic crush with a knife.

Sun-dried tomatoes cut into strips.

In a pan pour vegetable oil, fry the onions and garlic for a few minutes, add the carrots. After a few minutes, put in a pan with dried tomatoes. Add salt, pepper and add a pinch of Provencal herbs. In a minute add the beans, warm.
