Cooking
In a saucepan bring to boil water with margarine. Once it boils, quickly stir and immediately add all the flour. Quickly mix until no lumps and remove from fire. Again mix well. Let cool slightly and add eggs (one at a time) stirring well after each addition. In the end, we should get a shiny and sticky mass.
When slightly cooled, a teaspoon to put the paste on the baking sheet.
Put into a hot 200 C oven. Bake 45-50 min. in No case do not open the oven door! Then reduce the temperature to 180C and bake for another 15-20 min.
For the cream: combine in a saucepan the yolks with the sugar and whip until a light foam. Enter the sifted flour, still whisking. Boil the milk. Pour the milk into the egg mixture, place on the low heat and bring to a boil, stirring constantly. Cook for another 3-4 minutes. Melt the chocolate and stir it into the cream.
Fill the éclairs with cream.
Knead the chopped dough: sift the flour with the baking powder and a pinch of salt. Add the cold butter and chop into a homogeneous mass. Add the cheese and knead the dough. Put the dough in a detachable form and bake in the oven at 200 C until Golden brown.
To prepare fruit filling: beat yoghurt, add chopped in a blender berries and sugar (amount of sugar to add to taste). Soak gelatine according to instructions and to enter into fruit mixture. Allow to cool slightly in the cold.
The finished cake to put a little of the fruit mixture. Spread custard cake. And pour the remaining fruit mixture. Put in the refrigerator until fully cured.
