Salad with bulgur and vegetables
These salads are just a lifesaver during Lent, they may fully replace the second dish for lunch or dinner. And adding a few components not lean, you are sure to please your second half, which does not adhere to the Post.

Ingredients

  • Bulgur

    0.5 cup

  • Water

    1 cup

  • Cucumber

    1 piece

  • Tomato

    2 piece

  • Red onion

    1 piece

  • Olive oil

    2 Tbsp

  • Salt

    0.5 tsp

  • Lemon juice

    3 Tbsp

  • Parsley

    1 coup

  • The mixture of peppers

  • Shrimp

    100 g

  • Mozzarella

    50 g

  • Lemon juice

    1 Tbsp

  • The mixture of peppers

Cooking

For the preparation of vegetable additives do not in advance take the shrimp, let them self thaw, peel, sprinkle with lemon juice and sprinkle with freshly-ground mixture of peppers.

Bolger fill with water in the ratio 1 to 2, add 1 tablespoon of lemon juice, bring to a boil, cook on low heat for 10 minutes.

Cucumber, tomatoes and red onions cut into cubes.

Ready the cooled bulgur vrijsen with a wooden spoon. Add chopped vegetables and chopped parsley.

Salad dressed with remaining lemon juice, salt, olive oil, mix and divide in half.

One part of the salad just sprinkle with freshly-ground mixture of peppers.

The second part is put in marinated prawns and mozzarella balls. Bon appetit!
