With the advent of the first warm days I wanted to cook something with a hint of summer sun. Remembered long deferred, in a cookbook recipe and do not regret about your choice. The meat was very tender and tasty.

Cooking
Cut the meat into pieces of about 3cm. Fry until Golden brown in olive oil.
While fried meat, cut into a quarter of onion rings and garlic crush it with spadefoot toad.
Mushrooms peel and cut into plates.
We also need olives, cleaned and finely chopped tomatoes, wine and broth.
When the meat is browned, add the onion and garlic, stir and fry 2 minutes.
To send the same mushrooms and tomatoes. Saute 3-4 min.
And then add the wine, broth and olives. The broth should cover the meat. Pepper-to taste. Be careful with the salt since the olives are already salty, a bit insufficient salting better than to overdo it.
Cover and simmer over medium heat until tender (mine took 40 minutes). Before serving, sprinkle with fresh Basil or ice cream. Can be served with pasta (very tasty) or potatoes or as the heart desires. Bon appetit and spring mood!
