Fritters of celery root with apples
This recipe I saw a wonderful chef, Vladimir Pavlov in his program "Banal Kitchen Pavlova". This is a great recipe for weekend Breakfast - I use it (with minor modifications) for several years. Pancakes turn out very flavorful, tender and delicious. Often cook them for my wife - she really likes you. On this site I found some similar recipes, but they differ in the ingredients. The closest recipe uses soy sauce and wasabi - I tried to reproduce it. For my taste the Asian touch is interesting, but I like the recipe with the ingredients of Vladimir Pavlov. So I decided to publish the original recipe. In this recipe very successfully combines the tastes of celery, Apple and mint with a sweet-tart touch of sour honey and a hint of lemon. Ingredients

  • Celery root

    600 g

  • Honey

    4 Tbsp

  • Flour

    2.5 Tbsp

  • Chicken egg

    4 piece

  • Lemon juice

    2 Tbsp

  • Olive oil

    6 Tbsp

  • Mint

  • Apple

  • Sugar

    2 Tbsp

  • Butter

    60 g

  • Salt

    0.5 tsp

  • Horseradish

    2 tsp

Meanwhile, make the sauce. Take the Apple sauce and simmer in a pan with butter and 1 tbsp lemon juice over medium heat. To taste add sugar - flavor should be intense, sweet and sour. Simmer 5 minutes and 10 until thick

Allow the apples to cool and put in the blender.

Chop mint leaves and add to the blender. Add horseradish.

Puree them in a blender and the sauce is ready put in a bowl

Begin cooking the pancakes. Take celery root, wash it and cut it sprouts and peeled. The peel can be zamorozit and use for broth

Start shaping the fritters and lay them on the pan. Fry on medium heat (2/3 of max)

Ready pancakes spread on a plate with a paper towel and allow to drain oil. Top blotted with another piece of paper towel to remove excess oil from the top.

When excess oil is removed - can be served. Spread on a plate, spread on top of Apple sauce and decorate with mint leaves. Bon appetit!
