Cooking
Thyme wash, dry on a paper towel separating the leaves. Apples cleaned, remove core, cut into slices. So they are not darkened, put in a bowl of water and a slice of lemon.
In a saucepan melt 50 g of butter. Add the apples, sugar, leaves of thyme (6 sprigs) and simmer over medium heat for 5-8 minutes, until the apples are soft. Lubricate the form of butter and spread on the bottom of the filling.
To prepare the topping. A knife to chop the flour and butter (150 g), add sugar (150 g), hands grind into crumbs. Sprinkle top of the filling. Bake for 15-20 minutes at 200°C/400F until Golden brown.
Mix the milk and cream, add the thyme leaves. Heat, stirring, for 5 minutes on low heat, without boiling, the cream has absorbed the flavor of the thyme.
Beat the yolks with sugar. Strain the milk, pour in the egg yolks and mix well. Return the sauce on a quiet fire and cook, stirring constantly, until the cream thickens.
Before serving pour crumble thyme cream.
