Cupcakes
This year a big harvest of zucchini. That has to be used. Very easy to prepare muffins in a hurry. Especially good when cool or even the next day.

Ingredients

  • Zucchini

    3 piece

  • Sour cream

    150 g

  • Chicken egg

    2 piece

  • Vegetable oil

    0.5 cup

  • Feta

    150 g

  • Flour

    1 cup

  • Mint

  • Salt

  • Leavening agent

    1 Tbsp

  • Black pepper

Cooking

Zucchini grate on a grater and squeeze the juice. put the sour cream, eggs, butter, broken feta, mint, salt, pepper.

all mix well. add flour with baking powder.

Molds lubricated with oil and sprinkle with grated breadcrumbs filled with dough into 3 /4 pieces.

Bake for 40 -45 minutes at 170 gr. cupcakes can seem that is not cooked but it is not they will need to be left to cool down and then removed from the molds
