Lentils with eggplant and pumpkin

Ingredients

  • Pumpkin

    1 cup

  • Lentils

    1 cup

  • Eggplant

    2 piece

  • Tomato

    5 piece

  • Tomato paste

    2 Tbsp

  • Onion

    1 piece

  • Garlic

    1 tooth

  • Vegetable oil

    3 Tbsp

  • Water

    2 cup

  • Greens

    1 coup

Cooking

Cut the pumpkin in small pieces, onion half-rings or smaller. Eggplant also cut into cubes and season with salt and leave for 20 minutes (went to the bitterness, if necessary).

Lightly fry the onion and squash, add the lentils ,pour boiling water and stir. Cover the pot with a lid and cook on slow heat for 7-10 minutes.

Then add the eggplant , tomatoes, and diced tomato,garlic , salt .

Cook for another 10 minutes or so stirring occasionally. At the end of quenching add the herbs and pepper to taste.
