Description
Bonet. The famous Piedmontese dessert based on eggs, cocoa and Italian Amaretti cookies. Besides taste good because it can be prepared for the feast in advance.

Cooking
Mix the water and 300g of sugar. Stirring constantly, cook the caramel a rich brown color. Pour the finished caramel on the bottom of the form (or portion cups).
In advance turn on the oven. Eggs and whisk the yolks with 150g of sugar in a dense light weight.
Dry Amaretti cookies grind. In our stores Amaretti is not usual, so the macaroons I have homemade.
To beaten eggs add cocoa, crushed cookies and rum. Stir it carefully.
Warm the milk pour in the chocolate mixture and stir with a whisk. The resulting mass pour in the form with caramel. The form put in a deep pan or griddle, pour hot water so that it reaches 1/2 of the height of the form with a future dessert.
Bake for 40-50min. at 150C. Hot it will tremble in the middle. Cool completely Bonet. And better to soak it in the cold night. Turn dessert on a plate. Decorate or small Amaretti, or almond.
