Cooking
1. Wash pumpkin, cut off skin, remove seed, cut into cubes.
2. Heat 1-2 tablespoons of vegetable oil, and sauté the pumpkin for 1-2 minutes, stirring constantly.
3. Cut the bacon into thin and narrow slices, add to the pumpkin and sauté on medium heat. then leave to simmer on low heat for another 3-5 minutes.
4. Wash greens and Pat dry, then chop the parsley and lettuce cut into strips.
5. Add the parsley to the pan and stir.
6. Grate cheese on a coarse grater.
7. For salad dressing, mix vinegar, salt and pepper, whisk in olive oil.
8. Place lettuce on a large platter, followed by pumpkin, bacon and drizzle with sauce, sprinkle with grated cheese. Bon appetit!
