Cooking
Boil potatoes until tender, drain, mash into a puree. Chicken fillet cut into small bars. Season with salt and roll in flour. In a bowl mix the breadcrumbs and pecan chips.
Lightly whisk the whites. In another bowl, whisk whisk mashed potatoes, cranberry sauce, soy sauce. Gently stir in the whipped protein. Get the batter the consistency of thick cream, and airy as a cloud.
Dip the chicken fillets first in the potato - cranberry batter, then into the nut mixture with breadcrumbs. Fry the prepared kebabs in a frying pan with vegetable oil and grill on both sides until Golden brown, about 10 min.
Serve hot with cherry tomatoes and sprigs of parsley.
