Our family love a vegetable stew, and its composition changes frequently, depending on the availability of vegetables, today we eat such a stew, pagliocco was extremely tasty, with a light garlic note and moderately spicy.

Cooking
The basic ingredients for stew. Prepare the vegetables: wash and peel.
Cut the onion into half rings, carrot strips and fry in vegetable oil.
Add to vegetables, shredded sweet pepper, stir, fry.
Spread on top shredded potatoes, seasoned it with spices to potatoes, and stir zazharku and fry until cooked, ready vegetable mix put into a pan.
In the vacated pan pour vegetable oil and put the peeled, shredded zucchini, sprinkled them with herbes de Provence and fry.
On the prepared zucchini spread chopped cubes of tomato, salt, stir and fry. Cooked vegetables to add to the potatoes with the vegetables in the pan.
Prepare the sauce: mix the sour cream with tomato paste, pour water in gradually, stirring, add salt, pepper, "Mivina", sugar, chopped garlic and flour, mix thoroughly and pour the oil mixture over the vegetables in the pan, mix well.
In the stew put the chopped greens and carefully stir, reduce heat to min, cover with lid and simmer until very soft, 20 to 30 minutes.
