Rooster
A traditional dish of Greek village Bardonia of the region of Mana. Feature meals-use a hard sheep or goat cheese, which was the usual food for the residents of this village since ancient times.

Ingredients

  • Chicken

    1 kg

  • Tomato

    2 piece

  • Onion

    1 piece

  • Tomato paste

    1 Tbsp

  • Salt

  • Sugar

  • Black pepper

  • Cinnamon

  • Bay leaf

    2 piece

  • Semi-dry red wine

    150 ml

  • Olive oil

    100 ml

  • Cheese

    150 g

  • Green olives

    15 piece

Rooster cut into pieces.

Fry in small amount of oil prior to the acquisition of Golden brown.

Lightly fried rooster spread on paper towel to soak up excess fat.

In a saucepan, pour olive oil. Add the onion, chopped into large pieces, grated on a coarse grater tomatoes and tomato paste. Simmer with closed lid on medium heat for 5 min.

Diminish the power plate and add salt, pepper, Bay leaf, cinnamon, sugar (to your taste). To this mixture is put of a cock.

Pour in the wine, after 2 min add hot water so that the cock was covered. Cover with a lid and simmer about 50 min.

5 minutes prior to readiness add the sliced cheese and olives (whole or chopped-optional)
