In warm milk dissolve the honey, sugar and salt.
Then add the ginger, bicarbonate of soda, sifted flour and knead homogeneous dough. Flour may need more or less depends on the quality of the honey and the flour, as long as the dough was "hammered" with flour, otherwise the cookies will turn out hard.
Roll the dough out to a thickness of 5 mm, cut into strips 2 cm wide and a length of 8-10 cm
Lubricate protein for a light Shine after baking.
Bake at 180 deg. to Golden hue.
