Tomato risotto with asparagus
This tasty tomato "risotto", of course, possible to prepare and without the asparagus, if someone has no way to buy it. A great side dish to meat or a separate dish for dietary, vegetarian and Lenten food!

  • Broth

    500 ml

  • Black pepper

  • Olive oil

    1 Tbsp

  • Shallots

    1 piece

  • Garlic

    3 tooth

  • Spices

  • Asparagus

    4 piece

  • Cheese

    2 Tbsp

Asparagus clean http://www.povarenok .ru/recipes/show/47 255/ and cut into 3-4 pieces; onions, garlic and tomatoes finely chop and fry in olive oil for 3-4 min., stirring constantly.

Add tomato paste, pepper, spices and stir (1-2 minutes).

Add the rice and simmer, stirring constantly (1-2 minutes).

Add the wine and simmer, stirring occasionally, until the wine has evaporated; add 1/4 of the broth and simmer until the liquid has evaporated and absorbed into the rice; do this several times, gradually adding the broth for 8 minutes, stirring occasionally.

Then add the asparagus, cheese and remaining broth and simmer for another 12 minutes, stirring constantly.
