As our grandmother's, the best pastries from flour-semolina. Where to get it in the modern world is a mystery to me, but I do know that when added to the dough of semolina it is a more air. Semolina flour as if to mimic the very fine wheat flour. I use semolina from the Mistral.
So, let's start. In a large bowl mix the sifted flour and semolina, add salt, soda, sugar and vanilla sugar, stir, add dry instant yeast, pour the yogurt and add the very soft butter.
Knead soft pastry, cover it with foil and leave to rise for 2-3 hours at room temperature. In a warm place to put is not necessary, the dough should come by itself.
Once the dough has risen, ebonite it and leave for 1 hour.
Divide the dough into 2 parts. Flatten each into a reservoir about 25*40 cm and cut the edges as in the photo. In the centre lay the prunes, which should be washed and steam (if it hardish). Sprinkle the prunes with the brandy
