've been wanting to make homemade puff pastry, but to take was hesitant. In an old cookery book, found the recipe and decided to take a chance. It turned out the first time. It turned out very easy!

Cooking
The butter should be at room temperature. 150 g butter and 50 g of the flour mix. Formed from the mass of the ball or beam, put into the fridge.
Of the remaining oil, eggs, lemon juice, flour, salt and water knead the dough. The dough is well kneaded. Cover with a towel and leave on the table for 25-30 minutes.

Fold the dough and roll out. So that the oil is evenly distributed. Important! Puff pastry is always rolled out in only one direction.
Fold the dough and refrigerate for 20 minutes.
Take the dough, roll out, fold again and refrigerate for another 15 minutes.
Roll out the dough thickness of 0.5 cm And liberally sprinkle cheese, grated on a fine grater. Reserve some cheese to sprinkle on top. Cheese is better to take durum, fragrant.
