Coconut-lemon cupcakes
Bright, fragrant, delicate, airy - all this beauty I give my friend Olenka (orudakva ).

Ingredients

  • Flour

    1.5 cup

  • Brown sugar

    1 cup

  • Margarine

    100 g

  • Sour cream

    150 g

  • Chicken egg

    1 piece

  • Lemon peel

    2 tsp

  • Lemon juice

    1 Tbsp

  • Leavening agent

    2 tsp

  • Coconut shavings

    3 Tbsp

It is our products. Instead of sour cream you can use very thick yogurt, like Greek. The glass I have a regular - 250 ml.

The oven to turn on to preheat to 200 degrees. Melt margarine, cool slightly, add sour cream, stir, add egg, mix well.

Add the zest from half a lemon and 1 tbsp lemon juice, mix well.

Add sugar and coconut, mix well.

Add the sifted flour with the baking powder.

The batter is thicker than for pancakes.

Put the dough in the moulds and bake for 15-20 minutes. Be guided by your oven.
