Ratetol with chicken
Today I want to offer You a dish of French cuisine, rottoli. Someone may be asking: what is the difference between Ratatouille and rottoli? Sometimes no, because Ratatouille is a French vegetable stew that originally was made from courgettes, tomatoes, peppers, onions and garlic. Later in Ratatouille began to add the eggplant. Ratetol - initially eggplant dish from the same components, except that eggplants take a little longer. Ratatouille can be prepared without the eggplant, and rottoli - no. My version with the addition of chicken, although I can do without it, then it will be a meatless dish.

Ingredients

  • Chicken breast

  • Eggplant

  • Zucchini

  • Pepper

  • Garlic

  • Onion

  • Cherry tomatoes

  • Tomatoes in own juice

    100 g

  • Broth

    100 ml

  • Salt

  • Sugar

    1 tsp

  • Seasoning

    1 tsp

  • Greens

  • Black pepper

  • Olive oil

    2 Tbsp

Cooking

Eggplant wash, cut into strips, generously sprinkle with salt and set aside for 10 minutes.

The rest of the vegetables wash, peel, zucchini and bell pepper cut into strips, onion half rings, garlic in small cubes.

In a pan pour olive oil, put the onion and garlic and saute 2 minutes.

Put chicken and fry 5 minutes.

Eggplant wash, squeeze. Put in a pan, there also put the zucchini and bell pepper. All mix and fry for 2 minutes.

Add halved cherry tomatoes, tomatoes in own juice (I have my own), salt, sugar, black pepper and seasoning "Provencal herbs". Salt be careful as the eggplant salt.

All mix, add the broth and simmer on medium heat with the lid closed 15 minutes. Served hot. When serving, sprinkle any of your favorite greens. As side dish you can serve rice, pasta, but for me this dish is quite self-sufficient. Bon appetit!
