I have long wanted something to bake with rice flour, I decided to try a custard cake. They turned out airy and delicate.

Cooking
Preheat the oven to 220 gr. To prepare the dough in a pan pour the milk and water, put the butter and salt, bring to a boil.
In the hot milk mixture to pour all the rice flour and knead until the dough will get mixed up and at the bottom of the pan will not appear white film. Dough to shift in a bowl and slightly cool.
Then one by one add the eggs (not all at once!) and whisk until smooth dough.
To shift the dough in a pastry bag and squeeze out the cakes onto the lined baking sheet. I usually make the diameter 3 or 4 cm Oven 20 minutes During baking the oven door is not open!
The finished cakes to cool. Whip the cream until fluffy foam, add the icing sugar and whisk for a while. Carefully cut the cakes horizontally and put filling. Sprinkle with powdered sugar.
