Description
Les gimblettes d'albi - baking from a rather stiff dough in a ring shape with a sweet taste and aroma of orange, anise and lemon. This recipe appeared in the 15th century thanks to the Canon of the little town of Albi, in the South of France. Doughnuts were prepared in the period of Great Lent, consecrated on palm Sunday - they even say that the sweetness can be stored for several months.

Anise grind in the mill or in a mortar, remove the zest from half of a lemon. Yeast (if required by the instructions) pour 20 ml of warm water and give rise to "cap"
Mix 250 grams of flour, 1 whole egg and 2 egg yolks, salt, orange water, sugar and water.
Stir well, the dough is enough liquid. Add anise and lemon zest. Gradually we pour the remaining flour.
The dough will be tough. Give it a rest for a couple of hours.

Generated donuts - first, roll a sausage and shape of the ring.
Drop it into boiling water - passeruem. When the doughnuts float, remove with a slotted spoon on the towel.
