Salad with quinoa, carrots and dried fruit
Delicious salad, perfect for a light but filling snack or dinner for those watching their weight. Soft acidity based dressings, citrus juices and fresh flavor of oregano is a beautiful addition to the dish.

Ingredients

  • Quinoa

    50 g

  • Carrots

    80 g

  • Raisins

    50 g

  • Dried apricots

    50 g

  • Red onion

    30 g

  • Oregano

    0.5 tsp

  • Yogurt

    80 ml

  • Juice tangerine

    20 ml

  • Lemon juice

    10 ml

  • Honey

    1 Tbsp

  • Olive oil

    1 Tbsp

  • Salt

    0.25 tsp

  • The mixture of peppers

To prepare the salad, I used millet quinoa Mistral. In a saucepan pour the quinoa, pour water (1:2), bring to a boil. Cook on low heat under a tightly closed lid for 15 minutes. Remove from heat and leave to cool.

Dried fruits wash well and pour boiling water for 5 minutes, then drain the water. Apricots and carrots finely chop.

In a bowl, mix the quinoa, raisins, dried apricots, carrots, oregano and finely chopped onion.

In a separate bowl, mix all ingredients for filling.

Add the dressing to the salad and mix well.
