Pancake filled with cottage cheese and berry filling
Recently accidentally found out that the finished pancakes can easily be square, so as not to remain scraps. This "opening" and would like to share, first and foremost, and only then your favourite filling for pancakes - the most delicious combination of sweet and sour black currant and cottage cheese with sour cream. Using the stuffing of the pancake squares can be folded adorable mini-cake or to make a wonderful neat rolls!

Ingredients

  • Black currants

    60 g

  • Sugar

    30 g

  • Cheese

    200 g

  • Sour cream

    4 Tbsp

  • Powdered sugar

    2 Tbsp

  • Orange zest

    1 Tbsp

  • Vanilla

  • Cocoa powder

    1 tsp

Cooking

Black currants together with the sugar placed in the bowl of a blender and bring to a homogeneous condition, and then put in the fridge for thickening.

Meanwhile, mix cottage cheese with sour cream, orange zest, powdered sugar and vanilla. The mixture should remain quite thick.

Baked according to Your favorite recipe for pancakes cut into quarters. Two stacked on top of each corners in the opposite side of the quarters get smooth neat box.

Each square alternately coat the cheese and berry fillings.

Although, nothing prevents fluff quarters in a checkerboard pattern.

The last layer is better to make cheese. The resulting pancake mini-cake you can sprinkle a small amount of cocoa powder and put it in the refrigerator for some time, for better impregnation. After a night in the fridge will turn out tender pancakes cake.
