Immediately on coconut milk recipe that I have provided water to take 200ml, so the milk was tight, the rest of the recipe. Mix the coconut milk and oil with a fork in a glass blender, without fanaticism - a couple of laps.
Whisk immersion blender. In a minute get a thick mass, slightly flowing.
Add salt, mustard, sugar, citric acid - to fluff.
At this stage you can add any spices and seasonings to enhance the taste of mayonnaise and whip, and also taste for salt and acid. And yet, you need to add 1-2 tsp of cold water at the end, so that the mass was homogeneous.
The mayonnaise turned out delicious and quickly done.
