Coconut curry chicken with orange rice
Tasty, with some interesting notes dish! Juicy, spicy and very harmonious!!!

Ingredients

  • Chicken

    1 kg

  • Orange zest

    1 Tbsp

  • Figure

    200 g

  • Butter

    1 Tbsp

  • Garlic

    3 tooth

  • Ginger

    1 Tbsp

  • Chili

    1 piece

  • Red onion

    1 piece

  • Coconut milk

    200 ml

  • Curry

    1 tsp

  • Green onions

  • Olive oil

    2 Tbsp

Cooking

1 tbsp hot olive oil fry the chopped ginger, garlic, chili pepper (without seeds) and onion for 3-4 minutes

Add to the vegetables cut chicken (I remove skin) and curry. Fry for 5-6 minutes

Pour in the chicken coconut milk. Simmer on medium heat for 20 minutes.

While preparing chicken, make rice. For cooking perfect rice company Mistral "Basmati aromatic white".

In a saucepan melt butter, add olive oil and zest. Add rice. A little salt. Fry the rice for 2 minutes. Pour the boiling water (400 ml) and cook for 10 minutes. Giving rice to infuse for 20 minutes.

Spread on a large plate rice in a circle in the centre place the chicken with the sauce. All a pleasant appetite!!!
