Risotto
Recipes risotto there is more than one hundred. In Piedmont, among other ways of preparing this dish, there is this option: risotto with meatballs and pink wine. To prepare risotto, I used the rice variety Arborio (Arborio) - the most popular rice for this dish. It's rice with a high starch content, velvety texture and a delicate creamy taste. Risotto with Arborio is especially popular in Lombardia, Emilia-Romagna and Piedmont. Happy to offer a recipe.

Pork force meat (I did beforehand), add the onions (1pc), quail eggs, nutmeg, Parmesan 2-3 tbsp and salt to taste. Mix well.

To form the meatballs, roll them in breadcrumbs.

Fry the meatballs in olive oil over high heat until tender.

Of butter and chopped onion (2pcs) to prepare sofrito. The so-called base for risotto. In a convenient bowl, melt the butter and stew the onions.

Wash the rice.

Then put the rice into the prepared base, add the wine, salt to taste, sprinkle with paprika. Keep on average a uniform heat.

Then, in small portions pour the broth. So bring the rice until ready.

Garlic finely chop.

Remove risotto from heat, add meatballs.

Serve, sprinkled with garlic and remaining Parmesan cheese.
