Fish roulade with rice, eggplant and pickles
This dish was doing the first time. Turned out very tasty and unusual. Roll disappeared from the table in just 30 minutes. Hope you like it!

Ingredients

  • Fish fillets

    600 g

  • Bread crumbs

    100 g

  • Butter

    2 Tbsp

  • Eggplant

    1 piece

  • Figure

  • Vegetable oil

  • Cucumber

  • Chicken egg

    1 piece

  • Yolk egg

    1 piece

  • Black pepper

Boil the rice in salted water. I used the rice "Mistral Kuban". Onions finely chop, fry until Golden brown.

Fish grind in a blender (or mince).

Mix breadcrumbs, melted butter, egg, fried onions. Minced salt, pepper, knead thoroughly and leave in the refrigerator for 15 minutes.

Eggplant cut into thin slices, soak in salt water and leave for 10 minutes. Rinse, fry until Golden brown in vegetable oil. Put on paper to absorb excess fat.

On foil greased with butter, put the fish mince, flatten it (thickness - approximately 1 cm).

Then put the eggplant slices.

Sprinkle on rice.

Next, lay out the slices of cucumbers.

Brush with egg yolk.
