Cooking
Soak the beans for 2-3 hours, then boil until tender in slightly salted water. The cooking time indicated without taking into account the preparation of the beans.
To prepare quinoa : rinse thoroughly in cool running water to get rid of light bitterness
Pour quinoa and water, salt and bring to a boil. Next, close the lid and leave for 15 minutes on a hot plate over very low heat. Once the quinoa absorbs the water to cool to room temperature. The taste of cooked quinoa resembles millet, but in a salad the taste is lost.
Finely chop the onion and pour the lemon juice, let stand.
Mix the prepared beans (I think canned would also work), corn, cut cube, tomato, hot pepper - remove seeds if you don't like it very spicy.
Add the cooled quinoa and shredded cheese, greens, season with vegetable oil. Taste for salt, it seemed to me that instead of salt it is better to add a bit of soy sauce.
