Cooking
Flounder to wash, to dry. To make an incision along the head, remove the insides. Again rinse under running water, dry with paper towel. The fish sprinkle with soy sauce, lemon juice, salt and pepper, put in the abdomen a few sprigs of rosemary, and set aside to marinate.
Wash the vegetables, Pat dry with paper towel. The point is to slice the vegetables as thin as possible Cut into thin grater. Put into a form slightly overlapping.
Each layer is recommended to slightly grease with vegetable oil, season with salt and pepper. I just smeared a layer of potatoes.
For potatoes is a layer of young zucchini.
Layer thinly sliced mushrooms. Also salt and pepper.
Layer thinly sliced onions and fennel. Salt, pepper.
A layer of tomato. The tomato was very ripe, so I had to cut it with a knife.
A few sprigs of rosemary. Not to lubricate each layer of vegetables, I added 4st. L. vegetable broth.
Place the flounder on vegetables, grease it with vegetable oil. Cut into thin slices lemon, spread it on the fish. Cover form foil. Bake at 190* without convection for 25 minutes, remove the foil, turn on the convection, reduce t to 180* and bake for another 10 minutes.
