Japanese cheesecake
Delicate, airy, creamy cheesecake with vanilla flavor. It's hard to resist another piece with coffee! Recipe borrowed from Elena Tsoy.

Ingredients

  • Cream cheese

    250 g

  • Butter

    80 g

  • Cream

    265 ml

  • Flour

    40 g

  • Corn starch

    35 g

  • Vanilla pod

    1 piece

  • Sugar

    125 g

  • Egg white

    7 piece

  • Yolk egg

    7 piece

Ingredients for a form of 22 cm, I used a form of 24 see the Cream cheese, butter, cream, vanilla melt over low heat until complete dissolution of cheese and butter. Allow to cool to room temperature.

Beat the egg yolks with half the sugar.

Beat egg whites with the remaining sugar.

To the egg yolks pour the cream mixture. Add the flour and starch, stir.

Stir in the beaten egg whites. The form to cover the bottom and sides with parchment paper. Wrap foil. Pour the batter.

To put the form in a tray and pour boiling water on half of the mold. Put in a preheated 150C oven. Bake for approximately 1 hour, the middle should shake - cheesecake is ready. Switch off the oven, allow to cool. After about 20-30 minutes remove from the water, and send again in the oven until cool. Remove the side forms, remove the parchment, transfer to a plate. Sprinkle with sugar or berries.
