Creamy risotto with rabbit
It took a couple of weeks after my return home, and all this time my husband bravely tried to eat the same food that I, out of solidarity, so to speak. But by the 3rd week his strength was exhausted and he asked for "human food"! In the cupboard was rice for risotto in the fridge - the cream and the rest of the soup, added to this boiled rabbit and human lunch was ready! )))

Ingredients

    250 g

  • Rabbit

    150 g

  • Cream

    100 ml

  • Broth

    800 ml

  • Parmesan

    60 g

  • Garlic

    3 tooth

  • The mixture of peppers

    10 g

  • Bay leaf

    2 piece

  • Butter

    40 g

Cooking

The pieces of rabbit boil for 20 minutes until soft. Add salt, pepper and Bay leaf.

Fry the rice in butter for about 5-7 minutes.

Slowly pour 70-100ml of broth to the rice.

Wait until the broth is absorbed and add the next batch.

Rabbit get out of the pan, cool and cut into pieces.

In a pan fry the garlic in butter.

Add the rabbit and cook for another 5-6 minutes.

Enter the cream and saute for 3-4 minutes.

Add cream the rabbit risotto.

Grate the Parmesan and enter into a risotto.

That's all. Serve risotto sprinkled with a little Parmesan cheese! Bon appetit!)
