Prepare the ingredients: eggplant cut into 4 pieces. Fry in oil in a pan on all sides.
In a separate container pour the olive oil (can be sunflower), add the mixture of peppers from the mill. Chop the herbs (I had cilantro and it is best suited to our eggplants) and you can slightly grind the cashews (it's not baby). Add the nuts and herbs in oil, stir.
Spread on a dish, the eggplant and spread on top the mixture of nuts and herbs with butter and spices. So eggplant is perfect two types of lettuce: the first lettuce with tomatoes and garlic, and then mix salad with cucumbers and red onions, seasoned with spices and lemon juice. I assure you this is a wonderful appetizer that is easily prepared and will not leave indifferent even the threshold.
