Fried eggplant with cold marinade
Inspired recipe for fried eggplant cat Erica, Jr., counselor of the Czech restaurant "Budvar".

Ingredients

  • Pepper

    500 g

  • Vegetable oil

    10 Tbsp

  • Garlic

    8 tooth

  • Sugar

    1 Tbsp

  • Bay leaf

    1 piece

  • Carnation

    2 piece

  • Allspice

    3 piece

  • Cilantro

    1 tsp

  • Parsley

    1 coup

  • Cranberry

    1 handful

  • Salt

  • Black pepper

  • Onion

    500 g

  • Tomato

    500 g

  • Eggplant

    3 piece

Cooking

Tomatoes peeled, peppers from seeds, onions from the husk.

Grind everything in a blender. Add the vegetable oil, 5 tablespoons. Marinade bring to a boil and tormented for 40 minutes.

Add: sugar, Bay leaves, cloves, allspice, coriander, salt, black pepper.

Simmer for 10-15 minutes. Cooled. Remove Bay leaf and cloves. Add the grated garlic.

Eggplant peeled, cut into 1 cm thick, add salt to taste and fry in vegetable oil on both sides.

Still lukewarm on eggplant put the marinade, sprinkle with parsley, decorate with cranberries.
