Description
Mamoul - a traditional cookie in many Arab countries. There are many variations of the recipe. I chose something in between different options. Cookies turns out moderately sweet, crumbly, with a pleasant taste of dates and sesame seeds.

Cooking
The dough will be prepared in two stages. 1. In a separate bowl mix the flour and semolina. At this stage, use 1.5-2 cups of flour. Add the vegetable oil and melted butter. Mix well. (In some recipes it is recommended to keep this dough from a few hours to a day!)
I didn't wait! Separately, in warm milk to combine the yeast, sugar, salt. Leave for 5 minutes. Then combine milk with our dough, add vanilla. At this stage add the remaining flour. Flour can go more! The dough turns out very soft and airy. Leave the dough for an hour to rise.
For the filling, finely chop the dates or grind the easy way. Fry a few minutes the sesame seeds on a dry pan. Add the olive oil, nutmeg. To the obtained date paste, you can add nuts.
When the dough will increase significantly, to form small balls. Of date paste to form balls, smaller than a test.
Slightly flatten the dough and spread the filling, connect the edges, the seam should be on the bottom.
Ideally, a cookie is formed in a special formochkah pattern. You can just make a pattern with a fork. Shaped cookies to put on cookie sheet, bake in preheated oven at 180 degrees for about 25 - 30 minutes. Allow to cool, then sprinkle with powdered sugar.
