Vegetable sandwiches
Sandwiches - amazing! Great snack as dining table, or on holiday. Very delicate combination of aubergine, tomatoes and cheese.

Ingredients

  • Eggplant

    2 piece

  • Tomato

    5 piece

  • Dutch cheese

    200 g

  • Vegetable oil

    20 g

During selection of vegetables please note that eggplant and tomatoes were about the same diameter. Vegetables cut into rings of approximately the same thickness. Cheese to grate on a coarse grater. Just prisolit eggplants, wait until the release the juice and slightly press them.

Eggplant with the two sides a little bit of grease with vegetable oil and fry on grill (a grill pan can oil not grease). Spread the eggplant on a sheet. On each slice of eggplant put a ring of tomato. My tomatoes were a little bigger, I had to arrange them a little haircut ;)

Pour on top of each tomato a mound of grated cheese. The oven heated to 250 degrees. Bake for about 10-15 minutes. Once the cheese is melted and starts bubbling, remove the sheet from the oven.

The sandwiches to rest on the sheet until the cheese hardens a little and gently shift it on the dish. Bon appetit ;)
