Beet salad with prunes
Very tasty, easy, healthy and zesty salad of the foods good by itself as a light dinner, and will be a great side dish to fish or meat.

Ingredients

  • Beets

    1 piece

  • Prunes

    100 g

  • Pine nuts

    30 g

  • Lettuce

    1 coup

  • Olive oil

    2 Tbsp

  • Mustard

    1 tsp

  • Lemon juice

    1 tsp

  • Vinegar

    1 tsp

  • Salt

  • Black pepper

If you prepare the beets in advance, then the salad can be prepared in minutes. So, beets, boil or bake in advance, cut into cubes with sides of about 1 cm.

Prunes wash, dry, cut into four parts. If prunes too dry, pour it with boiling water for 10-15 minutes.

In a bowl mix ingredients for the filling: olive oil, vinegar, lemon juice, salt and pepper to taste.

Mix beets, prunes, coarsely chopped lettuce leaves, pour dressing, sprinkle with pine nuts.
