Lemon cookies with mint and pistachios
Delicate shortbread cookies with a fabulous delicate taste and aroma. A delicious dish that can be served for Breakfast family and guests for dessert. Lemon cookies are soft inside is perfect.

Ingredients

  • Butter

Wrap the dough in cling film and refrigerate for two hours.

After two hours, remove the dough from the refrigerator. Roll balls size of a walnut. Lay them on the parchment.

Press balls with bottom of a glass. Get washers 1 cm tall. Bake them at 180 degrees for 10 minutes. As soon as the reddening of the side - pull. Do not tumble dry.

While cookies are cooling, make the frosting. To do this in a bowl squeeze half a lemon and pour 100 g of powdered sugar. Stir well. You should get a thick paste. Chopped pistachios for decoration.

Pour glaze on top of cooled cookies and sprinkle with pistachios. After 10 minutes, the icing hardens and cookies can be folded in a sealed container.
