Eggplant salad
A wonderful salad with summer vegetables. Equally delicious warm or cold!

Ingredients

  • Eggplant

    300 g

  • Onion

    100 g

  • Tomato

    300 g

  • Vinegar

    20 ml

  • Basil

  • Salt

  • Allspice

  • Sunflower oil

Cooking

Eggplants remove skin, cut into slices and leave in salted water.

Onion cut into half rings. I took 50 gr. onion, 50 gr., red onion.

Fry in vegetable oil eggplant.

Then fry the onions.

Cut into slices tomatoes.

Combine all the ingredients, season with salt, pepper and vinegar, add the Basil (I have, unfortunately it was not), a little stir. Bon appetit!
