Autumn... harvest time and enjoy the vitamin meals, stocking up for the winter. Today I propose a very tasty and healthy salad from pumpkin with beets... Yes, Yes, Yes! Believe me, this combination will not leave You indifferent!

Ingredients

  • Beets

    1 piece

  • Pumpkin

    250 g

  • The Apium graveolens Dulce

    2 piece

  • Pumpkin seeds

    1 Tbsp

  • Pine nuts

    1 Tbsp

  • Balsamic

  • Vegetable oil

    2 Tbsp

  • Salt

  • Black pepper

  • Arugula

    1 coup

Beets wash, peel, cut into slices. Salt, pepper and pour 1 tbsp oil. Wrap in foil and send in a preheated 200 degree oven.

Pumpkin peel, freed from seeds and cut into slices. Celery cut into cubes. Salt, pepper, sprinkle with vegetable oil and wrap in foil. After 40 minutes of baking the beets are sent to the same pumpkin with the celery.
