Cooking
Dates to release from the bones and cut into not too fine.
Sift flour, add baking powder, vanilla and sugar. Particularly suitable brown sugar "Mistral" universal with its caramel flavor. Nigel Lawson: "the Advantage of cane sugar that it is sweet but not cloying. It imparts the flavor of molasses and sauce, and biscuit, liquorice, dark hue and saturation".
Melt the butter and egg to drive in the milk.
The liquid ingredients enter in a dry, wooden spoon or using the mixer knead the dough.
Stir into the batter the chopped dates.
Put the dough in the oiled portion of the refractory mold. In the original recipe, the pudding is baked in one big shape.
On top of the dough pour in 1.5 tablespoons of sugar (about 175 g).
Now comes the fun part! In each mold put a piece of butter and pour 100 ml of boiling water (about 600 ml). To quote the author: "I don't know what is the scientific principle, but it works, and I'm an empiricist". I venture to repeat - and it worked!
Bake in the oven at 180*C for about 30 minutes. Formed juicy sponge cake, and around - caramel sauce. It is important not to miss the moment when the cake was already grabbed and the sauce still boiling, otherwise it can turn into a caramel crust. Serve the pudding better warm, can be directly in the molds.
A good foil for the warm taste of pudding melting vanilla ice cream and fresh tart strawberries. If You don't like too sweet desserts, can reduce the amount of sugar for the dough (because of the sweetness and even give dates).
